Product Description
Stems:
The stems are proportionally derived from the grapes used to produce the Katogi Averoff product line. Specifically 40% Katogi Averoff Red, 40% Katogi Averoff White, 20% Katogi Averoff Rosé.
Production:
The production process begins with the fermentation of the stems which takes place in stainless steel tanks. Following the end of the alcoholic fermentation, the stems are acidified and kept at a low temperature and in an inert environment, using nitrogen, thus avoiding the growth of microorganisms. Fermented marcs are led in a short period of time, for distillation, in copper stills with a fractionation column, where the fractions of the head of the heart and the tails are separated. Finally, the distillate is diluted with ultrapure water from reverse osmosis so that it is free of chlorine, salts and heavy metals.

Appetizers from all over Greece, like octopus with vinegar, spicy and salty fish and meat.
General instructions for use & tips:
- No product is dishwasher-safe.
- All items can be preserved in good condition with the use of cooking oil.
- Before using for the first time, it is advisable to hand-wash each item and coat with cooking oil twice.
- Any items used for storing food (i.e. dried nuts, bread, etc) do not require oil coating.
- Do not soak any products for hours.
- After hand-washing, not dishwashing each product, towel dry and store.
